Pumpkin Walnut Bread

I’ve been on a baking/cooking frenzy lately – after making yet another banana walnut bread (which I love and make way too often – i.e. I should expand my repertoire), I decided to roll with the season and try to make one to celebrate the harvest (aka I couldn’t wait for another bunch of bananas to ripen, so I needed a substitute).

Using my banana walnut bread base, I substituted the mashed bananas with pumpkin puree (surprisingly a little hard to find because everyone is out to make pumpkin pie or a related pumpkin product for Canadian Thanksgiving), added a whole bunch of all spice, cloves, nutmeg, and cinnamon, toasted up 1 cup of walnuts (and let them cool) before adding them to the batter – and baked everything up. Needless to say, my place smelled lovely while magic was happening in the oven. :)

    Hi jb1169, it was pretty hearty, and I think it could have also used some pumpkin seeds to make it feel like it was a more complete "meal." :)
